A trend hitting the Midwest recently has been the decision to have your Ceremony & Reception in the same location. This day & age a growing number of marriages are from inter-faith couples which naturally leads them to becoming more interested in non-traditional sites for ceremonies. This trend has led to an influx of venues being chosen because they're able to host both.

There are several benefits to having your Big Day in one place. First, the cost is usually substantially less as many venues offer a package for booking the ceremony & reception together. Not to mention the money you can save by utilizing the flowers from your ceremony for the reception!

Another benefit that will save time & stress is choosing a location that offers dressing rooms. Here at The Lodge we give you full access to a beautiful lounge & locker room where there is ample room for everyone to relax and get pampered while friends & family can put the finishing touches on the reception area. There is nothing more relaxing than knowing all you have to do is walk a few steps over to the ballroom to tweak any flaw to your vision.

As many benefits as there are for the couple, the people who benefit the most are your guests. They save on gas and any frustration that may come by having to coordinate routes from one place to another-- especially those from out-of-town. Plus, you almost guarantee that the people who would've otherwise skipped the ceremony and just come for the reception are there for both-- which is a nice change considering so many people skip the most important part. Winter Reds Wine Flight

Despite the frigid temperatures and endless snow that seems to define winter, I still love this time of year because it is the perfect time of year to drink big & bold red wines. A full-bodied & dry Cabernet or a ripe & spicy Zinfandel just seems to offset the plummeting temps this time of year. We thought there was no better way to showcase this than to create a new wine flight: Winter Reds.

We start with the 2007 Terra di Briganti Aglianico. Although the Aglianico grape is originally from Greece, it is now almost exclusively grown in the south regions of Italy, this particular offering is from the Sannio area of Campania. Aglianico typically makes for full bodied wines with firm tannins & high acidity making it a perfect food-pairing wine. This particular bottle is a bit more approachable, but still makes for a nice full-bodied red to start the flight.

Next up is the 2007 Madorom Camouflage from Napa Valley. Camouflage is a blend consisting of 45% Cabernet Sauvignon, 34% Syrah, 16% Cabernet Franc & 5% Merlot. The tannins make for this wine to be dry & firm, but the combination of Cabernet & Syrah still make for a jammy, fruit-forward bottle. The presence of Oak is noticeable, but not overbearing-- making for a perfect pairing with a wintery night.

The 2007 Paraduxx Red Wine might be my favorite bottle on the entire flight. Made by famed Duckhorn vineyards in Napa Valley, Paraduxx is a beautiful, deep red blend consisting of 72% Zinfandel, 18% Cabernet Sauvignon, 9% Merlot and just a touch of Cabernet Franc. This wine has a touch more spice than the previous two bottles which blend perfectly with its flavors of rich blueberry, cedar & molasses.

Finishing this flight is the 2009 Petite Petit from Lodi, California made by Michael & David Winery. A blend of 85% Petite Sirah & 15% Petit Verdot which makes for a rich & dense wine highlighted with many dark fruit flavors. As the winemakers say, "Like elephants whose size is imposing, Petite Petit is large!" Above all, this wine is fun, accessible and very good. A perfect finish to a winter flight.

Wilderness Ridge & Vern White visit Milder Manor

Earlier this afternoon, Restaurant Manager David Berry & Wilderness’ House Entertainer, Vern White, visited the Lincoln Senior Nursing Home, Milder Manor, in order to bring the residents some entertainment and fun.

Vern White played on his keyboard & sang a collection of show tunes, musical pieces & oldies. Vern White had actually proposed the idea—to use his talents to bring some joy to folks who aren’t able to get out and listen to music too often.

Residents enjoyed the music, and most chimed in and sang-along when they heard songs they had known for years & years. This is only the beginning though, as Wilderness Ridge & Vern White hope to continue to do events like this in the future all around Lincoln.

Santa Claus & Wilderness Ridge visit the Mission!

Wilderness Ridge had the privilege of visiting the children at the People's City Mission this past Saturday. The day began with our chefs preparing breakfast for all of the kids & their families and then the kids took turns decorating Christmas cookies, writing letters to Santa Claus & finally being able to meet Santa Claus to give them their Christmas wish-lists in person!

We wanted the children at the Mission to know that Santa hasn't forgotten about them... that the joy of Christmas is for everyone.

With twenty volunteers we were able to serve over sixty people that morning... a special event that brought as much happiness to us as we were able to share.

We've also collected wish-lists from the children to help Santa ensure that all of those kids have the gifts they've asked for to open on Christmas morning.

A current wedding trend we've seen often recently are brooch bouquets. With the amount of money you could spend on fresh flowers for your big day, this is a great alternative, and one that will last a lot longer.

Many brides spend a small fortune on their flowers and unless you dry them, they’re all but gone in just a few days. Brooch Bouquets allow you to walk away from your wedding with a special piece still intact. They're also a great way to create something with added meaning by possibly using a special brooch a grandmother left you, or simply picking out brooches that carry sentimental value to you.

Many places are making brooch bouquets now and will customize it however you like. Of course, if you’re feeling crafty and have the time to make it yourself, it's a fun DIY project that anyone could do. While plenty of brides are still opting for fresh flowers, this is a great way to stand out from the norm, one that will make your wedding pictures pop, and surely draw the attention of your guests. Our head bartender & mixologist at the Lodge, Jill, has released her new seasonally-inspired Cocktail Menu. Featured in the new menu are cocktails served hot which make for the perfect after dinner drinks, or simply as a way to warm-up on these cold, late-autumn nights. Jill continues her philosophy of bringing back life & sophistication to classic cocktails & these hot drinks are no exception.

Hot Buttered Rum is equal parts classic & guilty pleasure. For ours, Jill starts with Bacardi Oakheart Spiced Rum, adds in her own butter mixture made from scratch (think butter, brown sugar, nutmeg & cinnamon), it's filled with hot water and garnished with a cinnamon stick.

Jill truly pays homage to the past with our Tom & Jerry. The Tom & Jerry mix is made in our own kitchen from scratch & to that she adds Aged Rum, Brandy, hot water & finishes with ground nutmeg.

Our Lodge Toddy is our instant classic. Using our own house-infused Cinnamon & Vanilla Bourbon, Jill adds in locally-made Honey, freshly squeezed Lemon juice and tops with hot water & a cinnamon stick garnish.

S'Mores Bar!

We recently had the opportunity to try something new out here at The Lodge. At a recent wedding, we turned the fireplace on our patio into a S’Mores Bar and the guests loved it! What better way to take advantage of the cooler fall nights than standing around a crackling fire roasting marshmallows & enjoy celebrating with your friends. Along with your standard marshmallows, chocolate and graham crackers, we offered Reese’s Peanut Butter Cups, crushed M&Ms, and Coconut shavings to create your perfect S’More. We think this is one sweet station you’ll want to try-and trust us, your guests will love it!

Wedding Trends: The perfect dress

When picking out that dress for the big day, every girl wants a dress that they can look back on and love just as much as the day they wore it. It’s important to avoid really trendy fads that will be in one year and out the next. One of my favorite eras is the 50s for that very reason.

The fashion and trends from this era seem to really stand the test of time. They’re chic without being too over the top, and they’re classy without being too matronly. This year we’re really starting to see this era come back to life in the fashion industry, and brides are taking notice! Think Grace Kelly, Audrey Hepburn, and that gorgeous dress Kate Middleton wore a few months ago.

Adding a delicate and very vintage touch to any dress is lace, and we’re definitely starting to see more of it. Whether it may be in the form of sleeves, around the neckline, or embroidered into the dress itself, it’s the perfect touch to any dress.

It might not be the most popular length, but tea length adds a very retro feel to any dress. And what better way to show off a really amazing pair of shoes?

Lastly, vintage inspired veils are starting to pop up more, with brides opting for more subtle retro headpieces with French netting framing the face, and longer veils with added touches of lace to give it a very vintage feel. This is a trend you can really have fun with and more importantly, it’s something you’ll be able to look back on and love just as much as you did on your wedding day!

Mason Jars probably aren't the first things that come to mind when thinking of weddings, receptions & showers... but we’ve been seeing a lot of them around here lately. Though subtle, these little jars can make a statement when it comes to decorating your tables. And with many events recently we've seen this trend over and over again: over-the-top is out and simple, yet elegant is in. Whether it’s a fancy affair or just something low-key, mason jars are suitable for any occasion.

or since we’re headed into fall, add your oranges and yellows

Keeping with the current trend of candy bars and dessert bars, this is sure to be a trend you’ll be seeing more of in future events. Cake bars are a fun and unique way to let your guests build their own perfect piece of cake. You know when you grab a piece of cake and there’s a giant mound of frosting on the top and covering the sides, it’s just going to end up on the side of your plate and eventually getting tossed.

This is a great way to allow you to take as little or as much frosting as you want. Not only that, it’s a fun way to mix and match flavors. With all of the different flavors of cake these days, pick out a few of your favorites and then choose an assortment of different frostings. Add some fun toppings, such as sprinkles, crushed Oreos, nuts, mini chocolate chips, etc…and you’ve got a delicious piece of cake!

It’s been a busy week at The Lodge! We rolled out our new Grill menu, and we couldn’t be more thrilled with the new additions to the menu! While we kept most favorites, we’ve added new salads, sandwiches and pizzas that are sure to become new favorites. For starters, we’ve added the coconut shrimp basket that is served with a pineapple chili sauce. This is a sweeter twist on the shrimp basket that was previously on the menu and a great way to kick off your meal!

Coconut Shrimp

Also new to this menu are “plate” options which include Steak Pomme Frittes, Hawaiian Salmon and Fish & Chips. The Hawaiian Salmon consists of a pan seared salmon filet, glazed with a pineapple chili sauce and paired with coconut cilantro rice and sautéed veggies. Having tried this dish, I can tell you, it is sure to be a favorite! Next up we’ve got the Meatball Sub. Now this is a sandwich. Served on a hoagie roll, the Meatball Sub consists of large sundried tomato meatballs topped with a roasted tomato and sweet pepper sauce and smoked provolone cheese.

Looking for a vegetarian option? Try our Portabella & Brie sandwich. With portabella mushrooms, red peppers, brie cheese, and sundried tomatoes, topped with a basil aioli, this sandwich is not only unique, but full of flavor! Lastly, we’ve added several new pizzas, but the Fiesta pizza is definitely one worth mentioning! It’s like a taco salad in the form of a pizza! We promise this is one worth trying the next time you are in, if you are a pizza fan! All in all, we’re very pleased with the additions to this menu and we’re excited for you to come out and let us know what you think! A new twist on an American favorite!

Now this is the perfect way to indulge without feeling guilty afterwards. They’re small, they’re loaded with flavor, and they’re relatively simple to make! Do you ever have a hard time deciding what slice of pie you want, because they all just look so good? This is the perfect way to have just one bite of each!

All you’ll need for this tasty treat is pie crust, pie filling, and lollipop sticks. Cutting out circles about two inches in diameter, place approximately ½ teaspoon of pie filling in the center along with a lollipop stick. Place another circle of pie crust on top and press the edges with the end of a lollipop stick to seal it. Bake at 350 for 15-20 minutes or until golden brown around the edges and let cool. So the next time you need a quick, fun treat to bring to work, entertain guests, or just something to have around the house when you have a sweet tooth, Pie Pops are sure to be the perfect sweet treat!

Make your cocktail hour even more celebratory with a signature drink! This is a fun way to personalize your day and can be a great conversation starter at your reception. If your looking for inspiration for your signature drink think about your colors, a mood your looking to create or fun glassware that fits your theme.

Don't over think your drink. If you are having an elegant evening wedding champagne with a fruit garnish is a perfect fit!

If you know you want a signature drink but don't know where to begin ask the bar manager at your reception site for tips and suggestions. Bar managers know what liquors will fit your color scheme, budget and tastes!

David Berry, the Bar Manager at Wilderness Ridge, is constantly creating new and inspired drinks for our restaurant cocktail menu so he can tell you what a few crowd favorites are so you can be sure to please. You will also want to think about how the flavors will pair with the season of your wedding. Even though you love Bahama Mamas that drink may not be the best choice for your winter wonderland wedding in February. A chocolate mint martini or warm spiced cider may be more appropriate.

Drinks that follow your wedding's color theme are always a hit!

Also, make sure your signature drink fits in your budget. If you are looking for the wow factor handmade garnishes or special glassware is the way to go. If you are looking to stay in a budget there are plenty of options using house liquors and fruit juice. Another way to control your budget is by offering your drink for a limited amount of time. Designate a certain cocktail hour where you will feature the drinks. Once the meal is served you can open up a cash bar!

Spring is a time of renewal, and that holds true here at the Lodge. We are renewing our wine list to bring you what’s new and fresh in the wine world!

Don’t worry, we’re still keeping the Silver Oak and the Opus, but we will also be proudly featuring other brands such as Hess, Terra Valentine, Siduri, Yalumba, Plumpjack, and La Crema to name a few. We will also be rotating our wines by the glass to give you the opportunity to taste a lot of our new wines before you decide you want the whole bottle.

We are also looking to ramp up our wine bar! Starting soon on Friday and Saturday nights you will be able to sit down at our wine bar and have a glass of Silver Oak or St. Jean Cinc Cepages. We will regularly rotate these wines to allow you to enjoy a glass of the legends. After this you can start looking forward to June where the theme will be the wines and food of the Rhone river valley.

Military Child Golf Camp a success!!

This past Saturday Wilderness Ridge hosted the 2nd annual Military Child Golf Camp. This is a way for Wilderness Ridge to say thanks to all the families who have loved ones serving our country during April, the month of the military child.

Almost 40 children from age three to 18 participated in the golf camp. The children spent time putting, chipping and working on their golf swing on the driving range. Early in the morning there was a threat of rain but by mid-morning the sun came through and the weather turned out to be perfect!

After a morning learning new techniques and practicing the perfect swing the kids ended the day with a hot dog BBQ and raffle. For more pictures CLICK HERE

Wilderness Ridge is now offering a great program to help golf newcomers learn the game in just 5 days....and at a reasonable price.

The Get Golf Ready program is designed to teach you the basics so you can start enjoying the game of golf now and for the rest of your lifetime. Over the five days you'll learn some golf history, basic stance and grip, golfing etiquette, which club to use and sooo much more.

I'll admit for being a golf course employee I'm a HORRIBLE golfer but I've been hesitant to take the time to learn. I'm sure many of you feel the same way....well this is the program perfect combination of a great price and minimal time commitment!

The Get Golf Ready program costs just $99 for 5 days of hands on training. If you or someone you know has shown interest in learning the game of golf this is an awesome opportunity. Munch Madness is a bracket style competition for Lancaster area restaurants. Each week restaurants go head to head in an attempt to become the Munch Madness Champ! Wilderness Ridge will be hosting a FREE golf clinic on April 2nd at 9:30 am. This clinic is open to children with military parents or family members. Registration is limited to the first 50 participants so be sure to sign up asap!

This year Wilderness Ridge teamed up with People's City Mission to collect coats for those who need them most this time of year. We set a goal to collect 400 coats and with your help we have exceeded that goal! This year we collected 466 coats. Nebraska Golf Academy gets a Facelift!

The Nebraska Golf Academy putting and chipping area has undergone a facility enhancement, starting with a re-surfacing of the sub-floor and the installation of a new state-of-the-art putting and chipping surface, thus creating a premier indoor practice area for all players.

The putting and chipping area enhancement will aid in the continued development of the University of Nebraska women’s and men’s golf teams, offer members the opportunity to continue practicing and enjoying the game of golf throughout the winter months, and public access to experience the unique Nebraska Golf Academy practice area.

This improvement became a reality through the strong cooperation of Wilderness Ridge, Nebraska Golf Academy, and the University of Nebraska. Completion date of project is estimated to be January 15th-25th.

Well you heard right folks. The best seat in the house actually overlooks The Grill. Our loft area is a little hidden gem that has an open rail with perfect views of the band in The Grill. You can enjoy dinner, drinks and all the fun from our entertainment in a more intimate and secluded area.

Our live music will perform directly in front of the windows so you can have the ultimate view from above!

This year Wilderness Ridge rang in the New Year with a packed house! The dining room and The Grill were both full with reservations and our Yellowstone Ballroom was brimming with guests at our New Year's Eve Bash. Sarabande provided easy listening for our guests in the dining room while Hardwood Dash kept guests on the dancefloor in the Yellowstone Ballroom.

I enjoyed mingling with members and diners as well as snapping a few photos of unsuspecting guests. :) Check out a few photos below!

Tis the season of the ugly sweater!

This past Monday we hosted our first annual Member's Ugly Sweater Party at The Grill. We had live music, free appetizers and sandwiches from the new Grill menu, and LOTS of ugly sweaters! I don't think there is anything more fun than seeing grown men with embellished sweater vests on! (Chris Thomson I am talking about you here, that sparkling sweater vest was awesome! Please see photo HERE)

We had a contest for the ugliest sweater on a male and female and it was tough choosing a winner. Congrats to Dave Reifschneider and Bonnie Warren who won prizes just as ugly as their sweaters. Personally I was voting for Lowell Warren (see photo below)

Those are giant yarn skiers and his wife brought this sweater back all the way from California! If I could find a replica my dad would be getting one of those bad boys for Christmas this year.

Thanks to all the member's who came out to The Grill and got dressed in their ugliest attire! We had a blast decorating for the party and hope you enjoyed getting together during the holiday season. We plan on having plenty more member get-togethers so stay tuned.....

Pancakes, Elves, Cookies and Santa!

Wilderness Ridge was overflowing with Christmas cheer during Breakfast with Santa this past Saturday. Santa Clause was in the house taking wishes, we had two merry elves running around The Lodge and the spirit of Christmas was everywhere you turned. What a wonderful way to start off December!

We had a pancake buffet complete with sausage links a lots of assorted donuts. Each table was set up with coloring pages, crayons, stickers and wish list for the children to fill out and place in Santa's mailbox. I had such a great time asking all the kids what they were asking for this Christmas and if they thought they had been bad of good this year.

Chico's brings fashion to The Lodge.

This past Wednesday The Lodge hosted a ladies tea and fashion show by Chico's and Naturally Yours Salon and Spa. We had a wonderful turnout with just under 100 ladies. It was such a fun holiday atmosphere and a great start to the month of Decemeber. All the ladies were dressed to impress and The Lodge was decked out in seasonal reds and greens.

I have been gushing with extra holiday cheer these past few days....and for those of you who know me that's really saying something. I was even smiling as I was out in the drizzling cold yesterday hanging up holiday lights on our house. The Lodge is in Christmas overhaul right now and the decorations are looking fabulous! (photos to come) The trees along our drive to The Lodge are all lit, the mantle in our dining room is beautiful and the grand Christmas tree in our lobby is receiving it's finishing touches today!

Santa Clause is coming to Wilderness Ridge!

This is my absolute favorite time of the year; Christmas music is begining to play, Holiday decorations are going up and there are multiple days filled with yummy homemade dinners and desserts! I know we can't skip over Thanksgiving all together but let's be honest, the real fun starts in December!

Here at Wilderness we are starting off the season with a "fun for the whole family event" December 4th!

One of the children's activities is going to be a sugar cookie decorating station....you can bet your Santa hat that I will be one of the first in line to decorate my cookie! :)

This year the weather has been a welcome change from the snow and cold we had last year but warmer weather isn't as reassuring for the folks at the People's City Mission.

The People's City Mission is short on winter appearal this year and much of that has to do with the beautiful weather we have been experiencing. However, snow is just around the corner and without enough coats in stock those staying at the People's City Mission could use our help.

If you have any new or gently used coats, gloves, and winter hats bring them to The Lodge at Wilderness Ridge where we will be collecting items to donate to the People's City Mission. The mission supports a great cause and it just feels good to give to those in need! Santa is watching after all!!

Golf Hall of Fame Induction a Family Tradition

LINCOLN, Neb. – When Mike Schuchart’s name was called for induction to the Nebraska Golf Association Hall of Fame it wasn’t the first time many in the crowd of 80 family, friends and fellow golf professionals had heard that last name. Both Schuchart’s father and grandfather had earned the distinction previously, a unique family distinction in the state of Nebraska.

Schuchart’s father Bob beemed with pride as he introduced him saying, “induction into this hall of fame is the result of one of three things, playing accomplishments, teaching skill or promotion of the sport. Mike has done all three.” A quick review of Schuchart’s resume verifies that assessment. He was a standout junior player in Nebraska, an all-Big Eight performer at the University of Nebraska and a PGA touring professional with numerous titles to his name including wins over top professionals including a young Tiger Woods.

His teaching resume is equally as impressive. The current PGA professional and Director of Nebraska Golf Academy at Wilderness Ridge Golf course is recognized as the top instructor in Lincoln and one of the best in the state of Nebraska. His record of awards and recognition documents this distinction.

Advancing the sport is a passion of Schuchart’s. He said, “I’m blessed to have the opportunity to teach the sport that I love so much and to share this great game with others.” But golf is not Schuchart’s only passion. He is a devoted family man who ended his professional touring career several years ago to spend time with his wife and young son. He held back his emotions as he praised his father for all that he meant to him growing up.

Despite his numerous golf playing and teaching accomplishments Schuchart remains humble saying, “I remember how proud of my father I was when he was inducted, I never thought I’d be here. ”

Along with his responsibilities as Director of the Nebraska Golf Academy at Wilderness Ridge, Schuchart assistant coach for the University of Nebraska Women’s Golf team.

If you have played golf this summer you are aware of the challenges that all golf courses faced with the extreme weather in the spring and the blistering heat during the summer. As a result we have used the weather as a learning tool and have been able to better understand what is happening with our grass and soil conditions at Wilderness Ridge. Below is a message from our Golf Course Superintendent, Derek Nicholson in regards to some of the measures that we will be taking to improve playing conditions not only for this year but for the future as well.

We want our membership and guests to be informed about our practices so that everyone understands what will be taking place to make Wilderness Ridge and even better golf experience.

Message from the Superintendent: Coming up from September 21, through September 24th, Wilderness Ridge has decided to subcontract out a cultural practice that I have wanted to do for a very long time. With the help of Dr. Terry Riordan retired professor from UNL, we are going to verti-drain aerify our fairways. Verti-drain aerification basically means deep tine aerifying. Brian Wood from Commercial Turf and Tractor will be coming in with three machines and punching holes in our fairways with solid tines anywhere from 8 to 12 inches deep. The purpose of such aggressive aerification is it creates incredible pore space, and it gives deep avenues for oxygen, roots, and water. We all saw what happened to our fairways this summer when it got extremely hot for a long time; verti-drain aerifying will help this condition. With deeper roots the plants will be able to handle environmental stresses much better. Also, the fairways should be drier. The water from irrigation or rain will go in to the soil down these channels instead of across. It should also help me not have to water fairways as often. All in all it is important for us to do at this time and since they are solid tines you should see minimal disruption while playing.

Now a quick note on fall projects going on the golf course. Seeding, seeding, seeding is our priority right now. We have already aerified our tees and greens so we will overseed throughout the month of September on tees, collars, fairways and the rough. We are also in full swing on sand trap renovations. It seems lately we have just been removing traps, but I do have a written plan detailing work to be done on every trap out here. We have several drainage projects going on and soon we will be into fall fertilization. It has been a tough year weather wise for turf on all golf courses. We are doing things to prevent future problems and I personally am looking forward to the fall season. I missed last years hunting season but I don’t plan on missing this one.

Kitchen competition results in innovative new menu items

To get his staff inspired and excited for the new menu Executive Chef Paul Gregory proposed a little challenge to his team. Create a new dish worthy of the new menu and recieve $100. Not a bad incentive to get those creative juices flowing.

"Each staff member has their individual strengths and styles and I wanted to showcase their talent," Chef Gregory said.

Gregory encouraged the staff to create lighter dishes for the late summer menu but allowed them plenty of room to get creative. The use of fresh ingredients, light sauces, and a minimalist approach is evident in each of the three winning dishes.

Alisha Knapp won for her middle eastern seared salmon dish with honey glaze on a bed of cous cous with a yogurt vinaigrette. Karel Polaceck for his ahi tuna and wasabi noodle entree with sauteed vegetables and pickled ginger, and Andrew Baldus claimed his prize for creating a classic salmon panzanella bread salad topped with grape tomatoes, onion, cucumber and red wine vinaigrette.

"I'm very proud of all the staff for their hard work and assistance in creating the new menu. I look forward to getting them all involved in recipe testing for the upcoming winter menu", Gregory said.

Summertime is the height of wedding season and we host many wedding receptions in our grand Yellowstone Ballroom every year. Our rustic log clubhouse with large picture windows and wood floors is a unique venue in Lincoln Nebraska. Another unique setting Wilderness Ridge boasts is our outdoor wedding island. A stone path winds past the Executive Course down to the wedding island where a large tree provides shade from the center of the island.

The NOLA Shrimp

Executive Chef Paul Gregory has been creating and assembling a multitude of new dishes this summer and we are just about ready to bring them to you! On August 16th Wilderness Ridge will introduce our fall menu. The menu design and food selection will be a treat to regulars and newcomers alike. We will be keeping a few Lodge favorites, like the spicy NOLA shrimp, and bringing back a few items that guests enjoyed in the past. I wish I could give you all a few teasers from the menu but you'll just have to wait until August 16th!

Also, we will be announcing our new breakfast menu soon. Breakfast is my absolute favorite meal and I have been drooling over a few of the new options. I will be one of the first people in line to try the new breakfast sandwiches Chef Gregory has been working on!!

Congratulations to our Head Golf Pro Chris Thomson. Thomson was recently named District Director for District 8 of the PGA of America. District 8 of the PGA of America encompasses the Iowa, Minnesota and Nebraska Sections. Chris was elected this July and will serve a term of three years plus an additional year prior to this actual term. This prior year will serve as an opportunity to "shadow" the incumbent District 8 Director, Jeff Smith, PGA from the Iowa Section. The actual three-year term will begin in January of 2012.

The District 8 Director serves as a liason between the District and the National Board of the PGA of America. As the Director 8 Director, Chris Thomson, PGA is also a member of the National Board of the PGA of America.

June Junior Golf Camp Photos!

This week we are hosting our June Junior Golf Camp! We have just over 30 kids participating and ages range from 5 to 13. The junior golfers are split into three age groups and each group has been working on a new skill each day. On Monday ages 5-8 worked on chipping with Maureen Farrell, ages 9 and 10 worked on their golf grip and swing with Mike Schuchart, and ages 11 and up practiced putting with Head Pro Chris Thomson.

I've been snapping photos each morning and it has been so fun to see the kids getting to know each other and having a chance to learn new skills. Many of the junior golfers could show me a thing or two out on the course! Click Here to see photos from the past two days. Sand trap that will be re-built to prevent water pooling

Wilderness Ridge is a beautiful place to enjoy both as a customer and as an employee. I can't think of a place I would rather be on a daily basis than on our golf course taking in the views I have helped create. Top to bottom I am proud of Wilderness Ridge but it is not without problems. Looking with a critical eye at our golf course reveals that our number one area of concern is our sand traps. Sand traps take an unbelievable amount of labor to maintain and we are trying to keep 91 of them in top shape at all times.

The key to a good sand trap is what's under the sand, not what is on top. Traps must have liner under the sand stapled to the subsoil of the bunker. The liner looks like a furnace filter and serves several purposes. It holds sand in place during a rain event and it keeps the subsoil from collecting in the bottom of the trap and contaminating the drain tile. Our traps at Wilderness Ridge were built without liner. After 10 years they now have contaminated drain tile and hold water like a pool every time it rains.

This all leads us to today and what we are doing to fix our sand traps. I put together a sand trap repair plan, identifying the problems and solutions of every trap on the property. Some traps have already been re-built, and some fo the traps we are filling in with soil and sodding them. The others will be re-built and as a group we decided to re-do every trap on 1, 17, and 18. To date we are on hold 17, with hole number one all done. We have finished two traps on 17 and will soon be moving to hole 18 to go.

Our goal is to eventually get through the entire golf course. A plan is in place and thankfully the resources have been approved to get the job done. It's quite a challenge thinking of how far we hae to go but every tiem we complete a bunker, the way we look at it, it is one less trap we have to pump out and push sand every time it rains. I hope our members and the rest of our patroms understand where we are going concerning out traps and continue to enjoy everything Wilderness Ridge has to offer.

I wanted to post this great photo of Jim and Cec Kelley, the lucky winners of our "Sea Food and Seaview" promotion with KFOR. The couple won a great trip to the Grand Bahamian Sandals resort along with a romantic dinner provided by Wilderness Ridge. We received a very thoughtful thank you from the couple this week and they enjoyed both the meal and the trip!

So glad we could be a part of their fun memories!

With indoor hitting bays and an indoor green you can keep your game sharp without facing the elements. Call the Golf Shop to reserve your bay at 434-5106. Each bay can be reserved for a one hour period and the Academy is open from 8am to 7pm.

Lincoln, NE - What do you get when you host a golf tournament with Ndamukong Suh, Larry the Cable Guy, Doc Sadler and over a dozen former Husker football stars and coaches? A lot of errant tee shots on one hand, but on the other, the opportunity to raise over $100,000 for Nebraska charities.

On a sun-drenched afternoon, the Bo Pelini Foundation, led by its namesake, hosted the inaugural Bo Pelini Celebrity Golf Tournament at Wilderness Ridge Golf course in Lincoln on May 3. To the delight of all concerned, the event raised between $125,000.00 for the Bo Pelini Foundation.

Connie Jamrog, the foundation’s executive director, said all of the money raised by event will stay in Nebraska to help Nebraskans in need.

“Support for this year’s event has been amazing,” Jamrog said. “Bruce Berres and his team at Wilderness Ridge went out of their way to make this event a success.”

“Our corporate donors really stepped up this year even in these tough economic times,” added Jeff Jamrog, Asst. Athletic Director for Football Operations for the Huskers and Connie Jamrog’s husband.

The event was sold out, and sponsors donated $2,500 each to the foundation. Recent Nebraska football stars Suh, Barrett Ruud, Phillip Dillard and Joe Ganz were on hand, along with legends including Tommie Frazier, Johnny Rodgers, and Rich Glover.

The event started with lunch in The Lodge at Wilderness Ridge’s Yellowstone room, followed by a shotgun start. There was a silent auction during the day and after the golf tournament, the players were treated to a steak dinner at the Lodge and live auction featuring a large array of Nebraska Athletics’ items, among numerous other prizes.

Foursomes were paired with a former football standout, coach or celebrity. The event followed a shamble tournament format, where every golfer drives and the team uses the best one and plays the rest of the hole on their own. Many of the former Huskers looked a lot less comfortable with a golf club in their hand than they did in a full set of football pads, which contributed to most of the teams being on the course for six hours.

Pelini got the tournament started by thanking all of the contributors and volunteers. He challenged everyone to an ugliest swing contest, chiding defensive backs coach Marvin Sanders: “Most of you don’t have a chance at winning that one. I’ve seen Marvin Sanders swing and nobody has a swing that ugly.”

Connie Jamrog said the Bo Pelini Foundation committee, which consists primarily of the wives of Nebraska football coaches, has worked hard to prepare for this event, the second major fund-raiser for the foundation. The first is Football 101, an introduction to Nebraska Football primarily designed for women. She also praised the Wilderness Ridge Staff and volunteers.

Kristen Stark and her sons Philip, 15, and Benjamin, 12, were among the 30 Wilderness Ridge members who volunteered their time to ensure the event was a success.

“My kids like to help out and this was a good opportunity for them to contribute,” said Stark.

It appears the event has a permanent home at Wilderness Ridge Golf course.

“It’s hard to beat the level of support we’ve received here.,” Connie Jamrog said. “We look forward to doing this again next year.”

Weekend at The Fantasy Wedding Show

Wilderness Ridge spent this Sunday at The Fantasy Wedding Show in downtown Lincoln. The wedding show was put together by A Sound Impression owner Cali Hlavac and was held at the Lied Center for Performing Arts. Twenty-six vendors were available for new brides to browse their booths and ask questions.

Our booth featured items from many of the vendors we work with on a regualar basis including Petal Creations, AAA Rentals, Purple Sky Photography, and Shane & Sunny Photography. The booth had plenty of photographs so brides-to-be could visualize what a wedding at The Lodge would look like.

Chef Lane Rosenberry made hand-dipped chocolate truffle lollipops for guests to sample as the stopped to get more information. The truffles were a HUGE hit and many people stopped by a second time to get more! We think the lollipops would look absolutely adorable on a cake table or placed as individual favors for guests.

The wedding show went really well and was a great warm-up event for future wedding shows! I think Jen and I have perfected out table set-up and tear-down planning. :)

Summer Junior Golf League

Zaca Mesa Wine Dinner

Friday night, The Lodge hosted a wine dinner for thirty guests. This was the first wine dinner we have offered in nearly a year and it was a night our guests are sure to remember. Those in attendance enjoyed a five course meal including Mussels, Cornish Hens, Mushroom Risotto Croquettes, Lemon Marinated Lamb and Point Reyes Bleu Cheese with Apricot Ginger Chutney. Executive Chef Lane Rosenberry perfectly complemented each course on his menu with a specific wine. The five Zaca Mesa wines offered were: Viognier, Roussane, Z Cuvee, Syrah and Late Harvest Viognier. Mike Ramsey traveled across the country to be the special guest speaker from Zaca Mesa. Mike and Lane visited each table throughout the evening and answered guest’s questions and further educated them on the vintages offered. The crowds favorite wine were the Roussane and Syrah; guests even ordered entire cases of wine to enjoy at home! This was the first wine dinner our new Beverage Manager, Jana Williams has hosted. Following this success, we are planning a beer dinner with featured beers from around the world and complementing finger food on the restaurant patio this June. Golf Shop Talk

Every day we seem to get one step closer to golf weather! There are some great things happening now at Wilderness Ridge and we hope you can be a part of it! The calendar of events has now been rolled out for members outlining fun events for Men, Women, Couples and kids. There are member bulletin boards in both locker rooms as well as the Café that will outline all the upcoming events. For the month of April we are planning a fun 9-Hole Men’s night event called a “One Man Scramble”. Basically it is a scramble format with yourself! Following the event participants can take part in a fun Taco and beer dinner. In May we will follow that up with a 3 Club Challenge on May 19th. For non-members, the Professional Staff will be hosting a free golf clinic for children of parents serving in the Military. Governor Dave Heineman will be signing a proclamation on April 8th declaring April as the month of the military child. Wilderness Ridge is excited to be able to give back to our community and to the men and women that keep us safe.

Beginning in May the member match play event will begin as well as the regular Thursday night league. Sign up’s are steadily coming in to the shop. In addition to the match play, our first couple’s night will be held on Friday, May 14th. This is a fun 9 hole event followed by dinner on the deck. There will be at least one couple's event per month and in July there are two. The final couple’s event will be a glow “night” golf scramble in August on the Executive Course. And finally in May we are trying to start a ladies 9-hole social golf night for members. This is a fun night for ladies to play in a non-competitive game of golf and gather following the round. A few tee times will be held each week for those wishing to participate. There is no cost to participate for our lady members.

Maureen has just received all the spring golf items. There are lots of great spring/summer colors and light weight fabrics to keep you cool and dry as the weather heats up. We just added an online Golf Shop to our website so now you can order online! Choose to pick up the item in the store or have it mailed directly to you. However, there are lots of great items in the Golf Shop that didn't make it online so be sure to browse the racks the next time your walking through to head out on the course!

Gearing up for warmer weather

With spring in full swing and summer on the way the grounds keepers here at Wilderness Ridge have plenty to keep them busy. Right now we are starting to re-build numerous sand traps on the course, which means removing edging and replacing sand. There are also areas of the course that have snow mold that will need to be raked out. Snow mold is a common winter disease and is easily remedied when the mold is raked away so new growth can begin.

The grounds also need cleaning up after the long snowy winter and our irrigation system will need to be checked for any leaks. We want to make sure each hole is in great condition before heavy golf traffic hits the course. A few trees have lingering Christmas lights that need to be taken down now that the weather is warm as well as other odds and ends tasks around The Lodge.

As you can see there is plenty to keep us busy before summer gets here! We look forward to seeing you on the course soon.

Ladies win the Leprechaun Chase!

Although the weather was windy and chilly nearly 400 men and women clad in green came out to Wilderness Ridge for the first ever Leprechaun Chase 10K. The race started at 12 noon and utilized the cart paths on both the Executive Course and Championship Course. Many racers started arriving around 10 am to grab their race-day packet and green t-shirts. The Lodge was a sea of green as racers prepared to line up for the start.

The race format was a bit unusual with the women starting 5 minutes before the men. This provided a "chase" with the winner of the chase winning green beer for their respective gender. Bridget Easley crossed the finish line first with a time of 39:07.

Meet the new golf instruction team

We have recently developed an award winning instruction team here at Wilderness Ridge that has credentials making it one of the top instruction teams in the state of Nebraska.

Chris Thomson is the Head Professional. Chris has been a part of Lincoln for the past 13 years and resides here with his wife Jane and two sons, Hayden and Carter. Chris is the Honorary President of PGA Nebraska Section and two-time PGA Golf Professional of the Year. Thomson has a record of success in all phases of golf operations with a particular emphasis on instruction.

"I'm such a people person and I really look forward to building a rapport with all the members", Thomson said. "The Wilderness Ridge golf course and facilities are second to none in Nebraska, and we have a great team of professionals to offer instruction to Lincoln golfers."

Mike Schuchart is the Director of Instruction for the Nebraska Golf Academy. He is an accomplished player and has been recognized by the PGA as Nebraska Teacher of the Year and named Golf Digest Teacher of the Year.

Maureen Farrell is the Assistant Golf Pro and club shop manager. Farrell was an assistant professional at Carnoustie Golf Club in Scotland in 2007 when the club hosted the British open. Farrell was also an assistant professional at Pinehurst number two in the Sandhills of North Carolina.

No need to wait for warmer weather to stop in the golf shop to say hello to our new team! Maureen has been filling the shelves with new merchandise and the Golf Academy is always open!

Wilderness Ridge will now be featuring Ivanna Cone ice cream! Chef Lane Rosenberry has been working to form a partnership with the local ice cream shop for quite some time and is excited to finally be serving their scoops.

"We love to buy fresh, local foods at The Lodge and Ivanna Cone is such a great local ice cream parlor. They are always creating unique flavor combinations that we feel will pair really well with the dishes we serve", Chef Lane said.

Right now we are serving Chocolate Mousse ice cream but it has been going fast! If you have any favorites that you would like to see at The Lodge let us know! You can post your suggestions below in the comments box!

On Jan. 29, 2010 myself, wife, family and friends har our "Welcome Home from Afghanistan" supper. Some of my friends are wine centric...brought their wine to the restaurant. You waived the corkage fee. In addition you provided my meal complimentary. Your kindness and professionalism was appreciated. Our food and drinks were wonderful. Our friends from California and North Carolina agree. in fact they were surprised to get such great quality service and cuisine in "Lincoln, NE".
